Food Gold: 20 Minute Roasted Chicken

Food Gold is back with another quick draw 20 minute dinner recipe. I whipped up this chicken dish on Sunday night using a few things I had in the pantry and some store bought chicken legs I needed to do something with. The sauce is really open to interpretation, as it’s really just an example of how to combine acidic (vinegar, lemon juice, tomatoes) with salty (olives) and possibly sweet (roasted tomatoes, mmm.) Even if you are not a tomato lover, you simply cannot deny that summertime is the time to try to use those tasty ‘lil dudes any chance you get. They are at the peak of flavor and really, really cheap. I just copped a carton of beautiful grape tomatoes at Whole Foods for 2 bucks and after throwing them in a few salads over the weekend, decided to use the rest as a star ingredient in this sammich.
